We noticed that the best restaurants were following a classic approach: Using seasonal ingredients, transforming them and keeping it simple.
as we quickly learned, we realized it wasn't so easy. The chefs who did understand and did indeed have the skill, many times just didn't have access to those ingredients, and certainly not at costs or quality that made sense.
